Why processing is necessary

Natural Honey Crystallises

Crystals and high viscosity make honey difficult to strain, cream or fill into jars. Controlled warmth can return crystallised honey to a workable state and reduce viscosity. What matters is controlling time and temperature so quality is protected.

Honey is linked to the contributing apiary sites and supply records before it moves through the processing system.

Each drum and lot is recorded so the final packed batch can be traced back through the source material.

Pollen, total pollen, colour and sugar measures help determine the variety and support the floral claim on the label.

Controlled liquefaction

Crystallised honey is carefully warmed when necessary to reduce crystals and viscosity without unnecessary quality loss.

Coarse straining

Visible foreign matter is removed while naturally occurring pollen is retained rather than stripped out through ultra-filtration.

Creaming or liquid preparation

The batch is prepared for the intended texture—creamed or liquid—before filling into retail packaging.

HMF and quality verification

HMF and other analytical indicators are checked and connected to the production record.

Packing and batch coding

The finished jar receives a batch code that customers can enter into Epoka Global TraceMe to view the available record.
