Honey often needs controlled liquefaction before packing. HMF is measured because it rises with heating and storage time, providing a clearer indicator than the undefined word “raw.”
Airborne’s internal system connects a packed batch to contributing apiaries, honey drums, analytical outcomes and movements recorded through the production process.
All honey naturally crystallises. To strain and pack it, processors may need to reduce crystals and viscosity using controlled warmth. The real question is not whether warmth was used, but whether the honey’s quality was impaired.
HMF is measured in mg/kg. A live batch result should be interpreted together with the product identity and other analytical values.
Airborne documents the normal structure as YYWWDB. Some current records contain an additional digit, so Epoka Global accepts six or seven digits.
Example: 192321 represents the first batch produced on Tuesday in week 23 of 2019.
The international honey standard says honey should not have ingredients added, should not have its essential composition impaired by processing, and may be named for a floral source when its sensory, physical, chemical and microscopic characteristics support that origin.
For exported Manuka honey, New Zealand also uses a scientific definition based on chemical markers and a DNA marker to distinguish monofloral and multifloral Manuka honey.
